Tractors, Combines and Big Rigs






One of our friends kids celebrated his birthday yesterday out at the farm. All the kids had a blast climbing all over the tractors, combine, big rig and the hay bails.

No Shirt, No Shoes + Popsicles = Summer



We have had a lot of fun playing wih our neighbors this summer!

Quick Cookies

Today I wanted to try and make a dessert that I didn't need the oven for. This is what I came up with. I used to make these with my Grandma.


Mix these ingredients in saucepan:
2 Cups Sugar
1/4 tsp. Salt
3 Tablespoons Cocoa
1/4 Cup Milk
1 stick of Butter

Bring to boil and boil for 2 minutes. While mixture is hot, add:
3 Cups uncooked Oatmeal
1/2 Cup of Peanut Butter
1 Tablespoon Vanilla

Mix well and use tablespoon to drop onto waxed paper.

Boring!

I feel that I have become a very boring person. What is it that makes people fun, exciting, intriguing? I think I need to make a things to do before I turn 30 list. Maybe I can be a really fun person in my 30's. Even though I have said that this birthday my 29th is supposed to be my last. If my 30th is celebrated the correct way, I guess I can keep aging. I would love some great ideas of things I should do before I turn 30. Remember they have to be things that can be done on our limited budget! Here's to me becoming more fun!

Girl's Getaway

Friday morning I left for a scrapbooking retreat. It was so good to get to spend time with friends, eating yummy food, sleeping and most of all getting caught up on my scrapbooks! It was nice to not be called mom all weekend, noone expected me to cook, clean, or do laundry for them. So, today I am home trying to recover and trying to get back in the swing of things. The retreat was just long enough to make me miss home. I wish Melissa (the owner) could have come home with me to cook though!!!

For those of you that scrapbook, I completed 47 pages and got completly caught up to Mother's Day 2008.

Young Cousins




While the older cousins where with Nana and Grandpa for a week of fun and VBS. Julie and the younger cousins came to visit. We had a nice relaxing time. We made a trip to Sonic for treats, played, watched a chick flick after the kids went to bed, made pancakes, stayed in our pj's till almost 11 am, went to Target and hit the dollar spot. It was so fun to see you guys, I am so glad you are back in Texas, we can now do this more often.

1 fish, 2 fish






The boys have finished 2 weeks of swim lessons! They both did a great job. On the last day they let family come to watch and we were amazed and impressed at how much they learned. They both learned survival skills and Christian can swim by himself quite a ways now. Christian recieved the badge from the level we entered him at on the 3rd day, then recieved the next level badge the 2nd week and started the next level. Reed recieved 1 badge and almost completed the next level. The boys want to swim everyday now!!!

Father's Day

This was the best Mother's Day ever, oh wait it was Father's Day wasn't it? It felt like Mother's Day. I guess this shows how amazing my Dad and husband are. We celebrated Saturday night with my parent's and they brought over the grill that we all bought Chance, steaks and all the fixings. It was one of the best meals Chance and I had in a long time. The steak had great flavor and the grilled veggies were awesome!

They also brought over the table my dad has been making for me. It is the most beautiful table I have ever seen. My dad is so talented and did I mention amazing! I love my new table!!! Everytime I walk in the kitchen I smile.

On Sunday we went to church and then we went to Cheddar's with Chance's parents for lunch. Went home and took naps, then our hometeam got together for dinner and swimming.
Chance, we love you very much! You are an amazing husband and father. I am so blessed to get to spend the rest of my life married to you! I hope you enjoyed Father's Day as much as I did!

Peanut Butter Fudge Cake

I think it is safe to say I have been craving Chocolate lately. Here is another fabulous recipe I found. Enjoy!

Peanut Butter Fudge Cake

Ingredients
1 box (18.25 ounces) devil's food cake mix
3 eggs
1 cup buttermilk
1/2 cup vegetable oil
2 cups chopped chocolate-covered peanut butter cups (about 8 ounces), plus more to garnish
8 ounces dark chocolate, chopped
1 cup heavy cream
1/2 cup creamy peanut butter

Directions
1. Heat oven to 350 degrees F. Coat two 9-inch round cake pans with nonstick cooking spray. Line with waxed paper; coat paper.

2. In a large bowl, beat cake mix, eggs, buttermilk and vegetable oil on low for 30 seconds. Increase speed to medium-high; beat for 2 minutes, scraping down side of the bowl after 1 minute. Fold in 2 cups of the chopped peanut butter cups.

3. Divide batter between prepared pans. Bake at 350 degrees F for about 34 minutes, or until a toothpick inserted in the center comes out clean. Let layers cool on a wire rack for 15 minutes. Turn out cakes onto wire racks and cool completely.

4. Place chopped dark chocolate in a medium-size bowl. Bring cream just to a boil and pour over chocolate. Whisk until chocolate melts. Add peanut butter and whisk until smooth.

5. Trim top of cake layers flat with a serrated knife. Put 1 cake layer on cooling rack and place on a baking sheet. Pour 1 cup frosting on top; spread evenly with a spatula. Top with remaining cake layer. Pour remaining frosting over the top, allowing it to spill over the sides. Smooth top and sides with spatula. Refrigerate 1 hour to set. Transfer cake to serving plate and garnish with chopped candy, if desired.

16 servings Prep: 15 minutes Chill: 1 hour Bake: at 350 degrees F for 34 minutes

Southern Brownie Pie

Southern Brownie Pie
1 14 oz. can of sweetened condensed milk (do NOT confuse this with evaporated milk which is a much thinner milk and will not work in this recipe)
1/4 cup butter
1/2 cup unsweetened baking cocoa (Hershey's makes this)
3 eggs (beat lightly)
3 TBS plain flour
1 tsp vanilla flavoring
3/4 to 1 cup chopped nuts (pecans are great)
1 pie shell (can make your own or use a store bought crust - don't pre-bake)
Directions:
First, make the pie crust. If you are not a good crust maker, then a great option is the roll out Pillsbury crusts in the refrigerator section at the grocery. It's hard to tell those from homemade. If using a frozen crust, get it out and let it thaw.

Get a medium sauce pan. Put the milk, butter, margarine, and cocoa in the pan. Turn the heat to low and slowly warm until everything is melted and mixed together. Stir occasionally so the mixture does not stick to the pan and scorch.

Take the chocolate mixture off the heat.

Put a spoon of the chocolate mixture in with the eggs beaten in a small bowl. This helps adjust the temperature and keeps the eggs from curdling when suddenly put in with a hot mixture
Next, stir in the eggs (with the dab of hot chocolate), flour, vanilla and nuts. The nuts really are optional but do add a lot to the overall taste of the pie.

Bake at 350 degrees F for 40 minutes in a 9 inch pie pan. If you're using a smaller pie pan, then you may need to push closer to 50 minutes on the cooking time. The toothpick trick does not work on brownie mixtures. You can lightly tap the center to determine if the brownie filling is set.

Southern Brownie Pie is especially good served warm with whipped cream or vanilla ice cream on top. It's also quite good cool.

This pie recipe, unlike many, does not need to be stored in the refrigerator.
