Lasagna Rolls

You will need:
1 Package of lasagna noodles
2 Cups mozzarella
1 (15 ounce) Ricotta Cheese
1 (8-10 ounces) thawed and chopped spinach
1 (28 ounce) Pasta Sauce Jar
1 TBS Oregano
1 1/2 tsp Basil
Salt & Pepper1/2 small onion
1. Cook noodles till they are almost done, then drain and set aside
2. In large bowl mix together mozzarella cheese, ricotta cheese, chopped spinach, onions, oregano, basil, some salt and pepper (salt & pep to your taste)
3. Lay out noodle flat and spread a thin layer of cheese mixture evenly. Then spread a thin layer of pasta sauce. Roll noodle up and place in pan (9x13), seem down.
4. When all noodles are rolled in pan, sprinkle salt over the bare noodles. Then top the remaining pasta sauce over the noodles. If you have any cheese mixture left over, plop a little dab on each noodle. I always like to sprinkle any left over mozzarella cheese too.
5. Bake in oven at 350* for 30 mins or until hot an bubbly.

Happy Easter






The Easter bunny came to our house and left the boys both a basket full of cars. They were very excited! We went to church, then had my parents, my Aunt Sandra and Chance's parents over for lunch. Thank you everyone for bringing food, everything was yummy! Christian made everyone a cross. Judy brought some eggs that are filled with confetti. The kids broke them on our heads.

Neighborhood Easter Party





Our Neighborhood had our first Easter Egg Hunt/Party. We had eggs in everyone's yards and all the kids just went crazy. Our wonderful neighbors across the street from us fixed goodie bags, hot dogs, cupcakes and chocolate covered marshmellows on a stick for all the kids. I am so thankful that we live in a neighborhood that everyone is so friendly and loves kids!

Eventful Evening

Tonight was not a normal Friday night. We went to eat and Reed fell out of his chair and his head on the edge of a wall. Chance picked him up and put his hand on what he thought would be a bump and we could kiss it and make it better, but when he moved his hand it was covered in blood. So, Chance paid our bill and off we went to the ER. Reed has a 1 1/2 inch gash in the top of his head and they had to staple it. Reed did great! They had to clean it which was probably the worst part, then numb it, then staple it. We took a few pics with our cell phone.

Our Wedding Day

Chance and I were married March 18, 2000 at 11:00 a.m. at Plymouth Park Baptist, Irving, TX.
My dress was sleeveless, scoop neck, beaded and satin. My flower bouquet was white tulips with wrapped stems. They were beautiful!
Bridesmaids wore black and carried spring tulip bouquets.
Bridesmaids: Julie Holt, Jennifer Towery, Angela Fraize, Michelle Jackson, Sharon Pilatovsky, Christina Mayo
Groomsmen: Kevin Heady, Darren Holt, Ron Piwetz, Jody Holmes, Chris Mayo, Jason Williams
Ring Bearers: Kameron & Karson Heady
Most memorable moments of the day:
My dad told me he didn't rent a tux and showed up at the bridal suite to take me to get my picture taken and he was wearing his overalls, I laugh about it now, but my emotions were a mess and I started crying. He really did have his tux, if you know my dad, this is so him. I love you daddy! We have a great picture of me in my dress and him in his overalls.

When it was time to exchange vows, Kevin (Chance's brother and bestman) pretended like he didn't have the ring and the groomsmen each looked in their pockets and then my nephews looked in theirs too. It was funny! I don't remember who ended up having the rings. I guess Kevin did somewhere.

We left in a horse drawn carriage and the man told me if it rained he would not get the horses out. Well, it rained that morning and my sister-in-law Julie and friend Jenn T. said a quick prayer with me and it turned out to be the most beautiful day ever. The rained cooled off the day and the sky was clear.

My dad did our reception. My favorite meal has always been breakfast foods and my dad did brunch type foods and since Chance and I didn't get to taste anything during the reception, they packed us a picnic basket full of stuff from the reception to eat before we went to the airport.

Our Honeymoon: We left a few hours after the wedding to go to Durango, Colorado. We stayed at Apple Orchard Inn. We had our own little cottage. It was the best Bed & Breakfast we have ever been to. We went skiing, shopping, rode the train and ate very well. It was a very romantic honeymoon!

Christian has always climbed all over everything. He doesn't seem to have any fear of heights or falling. He can spend hours climbing outside. Reed on the other hand is very grounded and likes to have help climbing. They are so different, but both love to be outside.

Our Snow Pictures




I know this is old news now, but I am just now uploading our snow pictures. It was so fun to watch the kids play out in the snow with their friends. Christian had a hard time getting used to the cold. He kept going inside to get warm. Reed on the other hand loved every second of the snow and we had to drag him in kicking and screaming. His cheeks and hands were so red! Only in Texas can we go to the park one day and it snow the next and then the next day be back to 80 degrees.

A Perfect Heart


Thank you to those of you that prayed for Reed. Reed had an EKG and a very cool Sonogram on his heart today all to tell us that he has a very healthy heart! His heart murmur was identified as an "innocent murmur." I can not express the amount of joy I felt when he told me everything looked good.

Finding the blessing

In everything, God has a reason and a purpose. Even if it doesn't seem pleasant at the moment...God will reveal why He took you down the road He did if you just wait and watch. I have learned that most of the time when the situation isn't how we planned, it ends up being better than we planned. God loves to BLESS His children!
